What happens if two people edit the same record at the same time?

Nothing is lost silently.

If you are both online and someone else saves the record while you are still editing it, your save does not go through straight away. You see "This record changed elsewhere", and a note on the record explains that someone else saved it while you were editing. What you typed is still on the screen. If you press Save again, your version is kept and replaces theirs.

If one of you was working offline in the desktop app, the changes are matched up when you reconnect. If you changed different fields, both changes are combined automatically. If you both changed the same field, both versions are kept, and the record shows "Review and resolve". There you choose "Keep this version", "Keep the other version" or "Combine changes". Nothing is thrown away.

Every record also has a History tab. It lists earlier versions, and "Restore" brings one back. Restoring puts the older version back as a new change. The version you had stays in the history, and you can undo the restore. History shows up to the most recent 100 changes for each record.

Records save when you press Save. A simple tick box saves as soon as you tick it.
